Japatri (Mace)
Japatri, or mace, is the dried aril (outer covering) of the nutmeg fruit (Myristica fragrans). It has a warm, slightly sweeter flavour than nutmeg and is prized in premium spice mixes, baked goods, sauces and perfumery. Supplied as whole blades and broken pieces, sun-dried and graded by colour (pale yellow to orange-red) for food and essential oil markets.
