Sago is universally known as Sabudana (Hindi, Gujarati, Marathi), Javvarishi (Tamil), Saggubiyyam (Telugu), or Sabbakki (Kannada). While true sago globally comes from the palm tree, the "sago" consumed in India is entirely made from tapioca starch extracted from the roots of the cassava plant (Manihot esculenta)
